Black Eyed Peas
INGREDIENTS
2 cups dried black eyed peas
2 quarts water
1 cooked ham slice
1 cup long grain rice
1 cup onion, chopped
1 cup celery, chopped
2 tsp. butter
1 1/2 tsp. salt
1 tsp. sugar
1/2 tsp. Italian seasoning
1/4 tsp. black pepper
DIRECTIONS
Sort and rinse beans. In large saucepan cover beans with water. Bring to boiling on high heat. Cook 2 minutes. Remove from heat; cover. Let stand 1 hour; drain.
In dutch oven combine 2 quarts water and ham. Bring to boiling on high heat. Reduce to low heat. Cook, covered, 15 minutes.
Add peas to ham. Bring to boiling on high heat. Reduce to low heat; cover. Cook, 45 minutes.
Add rice, onion, celery, butter, salt, sugar, Italian seasoning and black pepper; mix well. Bring to boiling on high heat.
Reduce to low heat; cover. Cook, 30 minutes or until peas are tender. Remove and chop ham. Stir ham into pea mixture.
Serves 10
