Slow Cooker Yams

1/4 cup butter
2 tsp. vanilla extract
1 tsp. salt
1 cup granulated sugar
1 cup brown sugar
4 lbs. sweet potatoes, peeled, sliced

1. In medium bowl combine butter, vanilla, salt, granulated sugar and brown sugar; mix well.

2. Layer potatoes and sugar mixture in slow cooker; stir.

3. Cook on LOW 4 hours.

Meatballs in Tomato Sauce

INGREDIENTS

2 lb. ground beef
2 onions, finely chopped
1 egg
2 slices bread broken into bite sized pieces
1 tsp. salt
1/2 tsp. pepper
1 tsp. garlic salt
1 tbsp. canola oil
2 cans (10.75 oz) tomato soup

DIRECTIONS

In medium bowl, mix all ingredients except for the tomato soup. Form mixture into medium sized meatballs.

In large skillet heat canola oil until hot. Brown meatballs until browned on all sides. Place meatballs in crockpot.

In medium bowl pour soup and 2 cups water; mix well. Pour over meatballs in crockpot. Cook on high for 4 hours or low for 6 hours.


Crockpot Chicken Cacciatore

INGREDIENTS

1 1/2 cups chicken broth
2 tsp. garlic powder
2 cans (14 1/2 oz.) diced Italian-style tomatoes
4 cups mushrooms, halved
2 onions, chopped
3 lb. chicken pieces, skinned
1/4 cup cornstarch
10 cups spaghetti, cooked, hot

DIRECTIONS

In crockpot, stir in 1 cup chicken broth, garlic powder, tomatoes, mushrooms and onions. Add chicken; turn to coat.

Cover; cook on low 8 hours. Remove chicken from crockpot; keep warm.

In small bowl, stir in cornstarch and remaining broth; mix well. Stir mixture into crockpot. Cover; cook on high 10 minutes. Serve with chicken and spaghetti.

Crockpot Pork Roast

INGREDIENTS

1 boneless porkroast
2 tsp. seasoned salt
1 tsp. black pepper
1 can(20 ounce) pineapple chunks, undrained
1 1/2 cups chopped dried cranberries

DIRECTIONS

Rub pork roast with salt and pepper, and place in a slow cooker. Pour in undrained pineapple chunks and sprinkle in the cranberries. Cover; cook on low 7 hours.

Crockpot Cube Steak Casserole

INGREDIENTS

4 cube steaks
1 can cream of chicken soup
1/2 can water
1 envelope onion soup mix
4 potatoes, halved, with or without peelings

DIRECTIONS

Spray crockpot with cooking spray. In a bowl, combine soups and water; mix well. Put 1/2 cup soup mixture on bottom of crockpot, add 2 steaks, put another 1/2 cup soup mixture on top of steaks, add other two steaks and rest of soup mixture. Lay potatoes on top. Cook on low 8-10 hours or high 4-5 hours (or until potatoes are done).

Bavarian Cabbage

INGREDIENTS

1  head of red cabbage, washed, coarsely sliced
2  onions, chopped
6 tart apples, cored, quartered
2 tsp. salt
2 cups hot water
3 tbsp. sugar
2/3 cup cider vinegar
6 tbsp. butter

DIRECTIONS

Place all ingredients in crock pot in order listed. Cover and cook on low 8 hours. Stir before serving.

Sloppy Joes

INGREDIENTS

1 red bell pepper

1 onion

3 cloves garlic

3 lbs. ground beef

1 1/4 cups ketchup

5 tbsp. Worcestershire sauce

4 tbsp. light brown sugar, firmly packed

3 tbsp. white wine vinegar

3 tbsp. yellow mustard

2 tsp. chili powder

Hamburger Buns

DIRECTIONS

Chop bell pepper to equal 1 cup. Set aside. Chop onion and mince garlic.

In large skillet cook ground beef, onion and garlic on medium high heat until browned. Drain.

In slow cooker combine ketchup, bell pepper, Worcestershire, brown sugar, white wine vinegar, mustard and chili powder.

Stir in beef mixture. Cover; cook on low 6 hours. Spoon on hamburger buns.

Cheesy Meat Loaf

INGREDIENTS

1 can (8 oz.) tomato sauce, divided

1 large egg, beaten

1/2 cup onion, chopped

1/2 cup green bell pepper, chopped

1/3 cup seasoned bread crumbs

2 tbsp. grated Parmesan cheese

1/2 tsp. garlic powder

1/4 tsp. black pepper

1 lb. ground beef

1/2 lb. ground pork

1 cup Asiago cheese, shredded

DIRECTIONS

Reserve 1/3 cup tomato sauce; cover; chill in refrigerator. In large bowl, combine remaining tomato sauce and egg. Stir in onion, bell pepper, bread crumbs, Parmesan, garlic powder and black pepper. Add beef and pork; mix well; shape into a loaf.

Place meat loaf on long strips of foil; lower into crockpot using foil strips. Cover; cook on high 4 hours.

Spread reserved tomato sauce over meat loaf. Sprinkle with cheese. Cover; cook on high 15 minutes or until cheese melts.

Crockpot Chicken Alfredo

INGREDIENTS

3 boneless, skinless chicken breast halves

1 cup Italian Salad Dressing

1 can (10 ¾ oz.) cream of chicken soup

1 package (8 oz.) cream cheese, softened

1 cup chicken broth

½ tsp. dried thyme

½ tsp. dried basil

½ tsp. salt

¼ tsp. black pepper

12 oz. fettuccine, cooked, drained

DIRECTIONS

Place chicken and salad dressing in zip lock bag. Chill for 10 hours.

Place chicken and marinade in crockpot. Cook, covered on medium for 4 hours, or until done.

Remove chicken; shred.

Add soup, cream cheese, broth, thyme, basil, salt and black pepper to liquid in crockpot; mix well.

Add chicken to crockpot. Cook, covered on high for 10 minutes or until heated. Serve over pasta.

Franks and Meatballs

INGREDIENTS

3 slices white bread, torn

¼ cup milk

1 lb. ground beef

1 large egg, beaten

1 tsp. onion salt

1/8 tsp. black pepper

1 bottle (12 oz.) chili sauce

2/3 cup currant jelly

1 tbsp. lemon juice

1 tbsp. mustard

1 lb. cocktail franks

DIRECTIONS

Place bread in large bowl. Add milk; let stand 5 minutes. Add ground beef, egg, onion salt and black pepper; mix well. Shape into 1 inch balls.

In large skillet cook meatballs on medium high heat for 10 minutes or until browned, turning occasionally.

In small bowl combine chili sauce, currant jelly, lemon juice and mustard; mix well.

Spoon chili sauce mixture into crockpot. Add meatballs and franks; mix well. Cook on high 2 hours.

Serves 16
