Cheese Broccoli Rice

INGREDIENTS

1 onion

1/2 red bell pepper

2 cups instant rice

1 1/3 cups water

1 can (10 3/4 oz.)condensed broccoli and cheese soup, undiluted

1 tbsp. minced parsley

1/2 tsp. salt

DIRECTIONS

Chop onion; set aside. Dice red bell pepper; set aside.

Spray medium saucepan with cooking spray; heat on medium heat.

Add onion and red bell pepper to saucepan. Cook until tender.

Add instant rice; mix well.

Add water, undiluted broccoli and cheese soup, parsley and salt; mix well.

Bring rice mixture to a boil.

Reduce heat; cover and cook 10 minutes or until liquid is absorbed and rice is tender.

Serves 6

Berbere Spice Chicken Breasts

This dish is very spicy hot. Not for the faint hearted.

INGREDIENTS

1 1/2 tbsp. cayenne pepper

1/2 tsp. ground ginger

1/4 tsp. ground cinnamon

1/8 tsp. ground cloves

1 lb. chicken breasts

1 tbsp. butter

1 tbps. vegetable oil

1 medium onion, chopped

2 cloves garlic, minced

2 tbsp. tomato paste

1 tsp. salt

2 cups rice, hot, cooked

2 tbsp. parsley, chopped

1 large egg, hard boiled

DIRECTIONS

For berbere, mix cayenne pepper, ginger, cinnamon and cloves in small bowl; mix well.

Cut chicken in bite size pieces, throw out skin and bones. Sprinkle with 1/4 tsp. berbere.  Store remaining berbere for later use.

Mix butter and vegetable oil in large skillet. Cook on medium heat until butter is melted. Saute chicken, onion and garlic in butter mixture, stirring constantly, until onion is tender.

Add tomato paste to skillet, stir. Stir in 1/3 cup water; cover.

Cook on low heat, stirring occasionally, until chicken is done, about 10 minutes. Stir in salt. Mix rice and parsley in small bowl, mix well. Spoon onto serving plate. Spoon chicken mixture on top of rice mixture. Grate egg, sprinkle on top of chicken.
